Quartirolo Lombardo has a crumbly texture and a sweet and slightly tart flavor that becomes harsher over time.
The name quartirolo is derived from the Italian expression erba quartirolo (forth grass), which means the best time of the season for cutting grasses (often the last cut of summer).
Thus, this cheese was originally made only at the end of summer (September) when the cows graze the grass.
Nevertheless, Quartirolo Lombardo is currently made throughout the year.
Quartirolo Lombardo Tasting Notes
Ivory-white on both the exterior and interior, this cheese has a crumbly, grainy texture with a refreshing, sweet flavor with little hints of sourness.
The aroma is incredibly invigorating with smells of yogurt, cow’s milk, and a suggestion of wild herbs.
How to Enjoy (PAIRING)
This cheese is extremely versatile and can go along many dishes ranging from pasta and risotto (hot dishes) to summer and winter salads (cold dishes).
Put in the speciality dish of Quartirolo pie, or serve with Valbissera di san Colombano, or Malvasia delle Lipari.
